A favourite fall-back for when the kids have vegetarian friends over – my friends the Flurys approve so it must be good!

400g/14oz butternut squash

50g/2oz butter (to roast butternut)

Maldon sea salt

black pepper

1 garlic clove, finely sliced

few sprigs of rosemary

2 tbsp olive oil (to roast butternut)

500g/18oz spinach

170g/6oz spaghetti

drizzle of olive oil to coat pasta when cooked

2 × 400g/14oz tins chopped tomatoes

2 tbsp Worcester sauce

2 tbsp soy sauce

2 tbsp fresh basil (or dried)

2 tbsp vegetable oil

1 leek, finely sliced

160ml/5½fl oz vegetable stock

50g/2oz pine nuts

150g/5oz ricotta cheese

180ml/6½fl oz single cream

75g/3oz mature Cheddar cheese, grated
